Banana and Coconut Milk Ice Cream


INGREDIENTS


Very ripe bananas ………… 2 lrg
Sweetened coconut flakes ….. 1/4 cup
Unsweetened coconut milk ….. 1/2 cup
Superfine sugar ………….. 1 tbsp
A squeeze of lime juice …… to taste
Dark rum ………………… 1 tbsp

PREPARATION


Slice the bananas crosswise 1/2 inch thick. Place on a baking sheet and freeze until solid, about 1 hour.Preheat the oven to 375iF. In a pie plate, toast the coconut for about 4 minutes, or until golden; let cool.In a food processor, combine the frozen bananas with the coconut milk, sugar, lime juice and rum. Purae until very creamy, about 2 minutes. Spoon into bowls, garnish with the toasted coconut and serve

Apple Juice Recipe with Celery, Nettles, and lemon



Ingredients

3 apples
2 celery stems
3 stems and leaves of nettles (optional)
½ lemon

How to Make

If your feeling brave go forage some nettles!
Wash the fruit and vegetables.
Core the apples.
Remove the lemon peel.
Slice apples to fit your juicer.
Juice and Enjoy.
